Adding a new plan to the subscription section. There is an option to add a new plan but no option to change the plan name.  Fro example changing yearly to one-time pay.

You can edit the Plan name, please check my attached image,

And for one-time pay, can you please consider Custom Payment/Payment Item option as I image attached,

Or  if those don't fill your requirements, please elaborate on it.
